Cube Cuvee #2: Orange Bitters Barrel

A blended, barrel aged sour ale consisting of saison aged two years in barrels previously containing Fee Brothers orange bitters, and golden sour ale aged six months in neutral oak.

Created in collaboration with the team at Blue Hill, this refreshing Berliner Weisse is brewed as an ode to crop rotation. The historical tradition of rotating crops creates nutrient-rich growing conditions that produce the most flavorful grains and vegetables. Clover is a cover crop that nourishes the soil; oats and rye improve soil structure and suppress weeds; barley rids the field of fungus and pests. The ingredients in this beer both contribute to and result from the health of the whole farm. Brewed with malt grown in New York.


Apricot Rebus
STYLE: Mixed Culture Sour Ale Refermented with Apricots in Stainless
ABV: 5.5%
Acidity: medium to high
COLOR: opaque yellow

From the same mixed culture that brought you Lucky Cloud, Rubus Rebus, Boysen Rebus, and Plink. Complex farmhouse notes with pineappley brett and lactic acidity. Big, jammy apricot flavors and even some fruit particles in suspension! Barkeeps, avoid restrictor valves on this one; as with Rubus and Boysen, this is brewed with about 30% fruit puree by volume. Light dry-hopping with Azacca. Brewed at Flagship on Staten Island. Draft only.

This intensely tropical, tart berliner is one of our favorite releases of the summer. Conditioned on oak, refermented on passionfruit, and then dry hopped with tettnang, el dorado, and hallertau blanc. Packed with mouthwateringly vibrant, JUICY passionfruit character.


Kinetic Cloud
STYLE: Dry Hopped Sour Ale featuring New Zealand hops
ABV: 5%
ACIDITY: medium
COLOR: hazy straw gold

The latest entry in the “kinesis” series features 100% New Zealand hops: Wai-iti, Kohatu, and Wakatu. This juicy, tart crusher has flavors of underripe green fruit, honeysuckle flowers, and hop resin. The oak brings significant tannic presence this time along with woody coconut notes. Mouthwatering!

Plink is a brett-forward, mixed culture sour ale featuring hibiscus and orange zest. The hibiscus contributes earthy and fruity tartness against a background of citrus. Complexly layered acids produce an assertively sour quencher that is clean, rewarding, and thought-provoking.
