Refreshing, dry, tart, and funky, this Lambic-inspired American spontaneous ale is the result of the mindful blending of oak barrel stock produced here in Brooklyn over the span of two years.  This is not a simple fruited sour resulting from a quick lactic acid fermentation; Ambient Fizz: Blackberries’ complexity developed over extended fermentation in oak barrels with ambient-inoculated, wild microbes.  This well-balanced tart ale is then refermented on blackberries in accordance with tradition.  Spontaneous ales are not only delicious; like other wild-fermented foods they provide beneficial enzymes, organic acids, and probiotics.
