Physica Wines

Physica Wines emerge organically from grapes that are carefully selected by our friends on the North Fork of Long Island.

Our process is ancient and low-tech; we employ whole-cluster spontaneous fermentations with skin and stem contact. We use zero added yeasts and zero added sulfites.

Physica is the experimental sister winery to Grimm Artisanal Ales. These projects are united by dedication to excellence: complex results that come from simple, quality ingredients, transfigured by fermentation.

THE WILD 2022

This still orange wine is focused exclusively on the beautiful Sauvignon Blanc grapes grown by our friend Jon Viviano in Cutchogue, NY. Jon is a captain on the Staten Island Ferry and his cultivation of his family vineyard is the passion project he does on the side. These grapes arrived in perfect clusters and produced a clean and complex wine with balanced acidity. After one month’s maceration and fermentation in full skin and stem contact, we racked the free-run juice to neutral oak barrels for nine months’ rest. As always, we used no added sulfites, exogenous yeasts, chaptalization, filtration, or other interventions. The Wild is a delight, with ample notes of citrus and passionfruit.

ACCOMPANY 2022

Accompany is an idiosyncratic amber sparkling wine produced with a spontaneous, whole-cluster ferment of Pinot Noir, Chardonnay, and Riesling grapes grown on the North Fork of Long Island. Harvested in the fall of 2022, these grapes underwent maceration and fermentation in skin contact for one month. The free-run juice was racked to oak barrels where it matured for one year before bottle conditioning. This unique and delectable wine entices with aromas of dried orange peel, apricot, and beeswax. The palate is gently tart and fruity with impressions of ripe strawberry. Truly delicious!

PRESAGE 2021

This complex and luscious red is made by whole-cluster maceration and spontaneous fermentation of Merlot grapes grown at Viviano Vineyard in Cutchogue, NY. The free-run juice was matured in neutral oak barrels for over 12 months. We used no added sulfites, exogenous yeasts or bacteria, filtration, or other interventions.

SPINDLE 2022

Spindle is a red wine produced with a spontaneous coferment of 75% whole cluster Cabernet Sauvignon and 25% crushed/destemmed Merlot, grown at Sannino and Vivano Vineyards respectively, in Cutchogue on the North Fork of Long Island. Harvested in autumn of ‘22, it underwent a long maceration and fermentation in stainless steel, even longer maturation in neutral oak casks, and substantial conditioning in the bottle to arrive at a peak of drinkability today. Aromas of chocolate, fig, and dark fruits foreshadow a robust palate of black cherry and graphite with perfectly balanced acidity and tannin. A triumph of Physica’s young and evolving natural wine skillset!

SPINDLE 2022

Glossolalia (Piquette)

Glossolalia is made with a second use of our Riesling grapes and then dry hopped with Motueka hops from New Zealand. Refreshing with notes of lychee and lime zest, Glossolalia sits at the intersection of wild ale and natural wine. And for the first time we’re releasing the piquette in a can, to emphasize this piquette’s casual drinkability. Stay tuned for details on the other piquette we are releasing this weekend!

SPRITZ (PIQUETTE)

Spritz is a delicate, sparkling piquette made by a second steeping of whole-cluster Chardonnay grapes grown biodynamically by Macari Wines on the North Fork of Long Island. Like all of our wines and piquettes, it is spontaneously fermented and no sulfites were added. Spritz offers the rustic sophistication of a natural orange chard in a sleek, lower-alcohol package. With notes of pear, apple, honeysuckle and steel, it has bright and balanced acidity and is dry on the palate with just a hint of grippy tannin.

SPRITZ (PIQUETTE)

HUSH (piquette)

Produced with a second steeping on Cabernet Sauvignon grapes grown by Sannino Vineyard in Cutchogue, NY, this sparkling piquette received a botanical infusion of rose petals and chamomile flowers. It is made by spontaneous fermentation with an additional dose of yeast added to assist in producing natural carbonation in the bottle. No sulfites were added. (7.2% ABV)

This smashable, sparkling piquette is made by a second steeping of whole-cluster Cabernet Franc, Cabernet Sauvignon, And Merlot grapes grown on the North Fork of Long Island. It was spontaneously fermented and no sulfites were added. (6.6% ABV)
