Spritzy Spontaneous Ale conditioned on Riesling
Ambient Fizz is our special project where we make barrel-aged spontaneous ale influenced by Belgian lambic, but with a lower abv and a spritzier presentation. For Ambient Fizz: Riesling, we refermented our Ambient Fizz base beer on whole cluster Riesling pommace sidestreamed from Physica Wines 2023 vintage of Riesling grapes. Complex, tart, and refreshing.
