Ambient Fizz: Tart Cherries and Blueberries

hen we work with whole fruit from local farms (that is, fruit that isn’t pureed), it is a challenge to extract all of the juice contained within the fruit. Our solution is to make a second, lighter beer by blending barrels back into that same fruit again, to extract all of that goodness. AMBIENT FIZZ TART CHERRY AND BLUEBERRY is a delicate and spritzy barrel-aged spontaneous ale made with a second steeping on the fruit used for a Gathering beer, and packaged in a can. Drinkable yet complex!
