Barrel-aged dark sour ale w/ local blackberries & plums

Borogove begins with local fruit sourced at peak ripeness–blackberries from Wright’s Farm in Gardiner, NY, and Italian plums from Trinity Farm in Clintondale, NY. These fruits underwent a carbonic maceration and autofermentation before blending and secondary fermentation with dark sour ale that was aged in third-use bourbon barrels. Bright aromatics of tart berry and juicy stone fruit are accompanied by rich flavors of roasted malt and bourbon barrel-baked complexities–warm baking spices, oak tannins, and a touch of caramel sweetness.
