Foeder-Fermented Mixed Culture Sour with Boysenberries
Boysen Rebus highlights the alchemy of fermentation. Its bright funky acidity focuses attention on the complex character of our house mixed-culture and old-world fermentation methods. We fermented this sour beer in our oak foeder and re-fermented it on boysenberries, a cross between a European raspberry and blackberry with deep flavor. We blended in a few of our most pungent and bretty aged hop barrels for additional satisfying funk.
