Duivel’s Tea: Black Dragon
Duivelsbier conditioned on black dragon oolong tea
In collaboration with @Yesfolk, we blended this velvety dark sour ale from 50% spontaneous duivelsbier and 50% mixed culture sour ale, with an average barrel residence of 1.5 years. We conditioned the blend on Black Dragon oolong, in which large, mature tea leaves are tightly rolled and undergo 40% oxidation for a deep but surprisingly fruity bouquet. This tea is grown in the famous oolong region of Anxi in Fujian, China. We then aged this dark sour ale for an additional year in the bottle! The result is an incredibly smooth dark sour with notes of chocolate, red wine, and dried fruit.
