Gathering Nectarines

The Gathering series highlights fresh, whole, local fruit picked at the peak of ripeness. For this rendition, we sourced nectarines from Larchmont Farms in Deerfield, New Jersey. These fruits underwent a carbonic maceration and spontaneous autofermentation before blending and secondary fermentation with some of our finest barrels of aged sour beer. The resulting beer layers extra-funky brett character and complex acidity with a delicate fruit profile—-soft, floral notes of white tea and fleshy stone fruit.
