Jub Jub Bird is an aperitif style sour ale made in collaboration with Blue Hill at Stone Barns. It is a bright yellow spontaneous ale re-fermented on paw paws, marigold flowers, fig leaves, and hardy kiwis. Native to the Northeast, paw paw fruits have a soft, custard-like flesh with an aromatic and tropical flavor somewhere between a mango and a banana. The fig leaves bring a rich, coconut-vanilla quality. Marigolds and hardy kiwis lend floral elements and zippy acids, respectively.
