Barleywine aged in Cognac Barrels
The sister to Village Green, this sumptuous barleywine is based around deeply caramelized, long-boiled Maris Otter malt and East Kent Goldings hops. Using a partigyle mash to take only the strongest runnings for this beer, we hit a whopping 32 plato in the boil. Two years’ rest in cognac barrels added velvety layers of smooth booze to the existing complex notes of dried fig, date, and plum.
