Spelt Saison Ale brewed with Brettanomyces

Queenside is a brett-laced spelt saison aged in our oak foeder to develop complex acidity from the resident microbes that reside in the wood. Queenside was can conditioned to a high degree of carbonation and as it rested it underwent the famous “ropy period” as pediococcus built up more tartness and then brettanomyces broke those polysaccharides back down. After two seasons of maturation in the package, this is a farmhouse ale of tart complexity! We get noble hops, stone fruit, balanced tartness, and leathery brettanomyces funk.
