Saison Spritz: Brooklyn

Beginning with pomace from the redcurrants, nectarines, and blueberries used in one of our Gathering beers, we then added 600 lbs of Long Island-grown sauvignon blanc white grapes for a semi-carbonic maceration. After one week of maceration we blended in an assortment of barrel aged saisons from our oak vault, followed by a touch of de-aerated water to bring the whole thing down to a crispy 4% ABV. The result is our most crushable wild beer of the year: a layered nose of stone fruit, white wine, and Belgian yeast esters gives way to an ultra clean and light sip, with a hint of tartness and a dry, gently tannic finish.
