The Open Work: Cabernet Sauvignon is a beautiful spontaneous ale operating at the fuzzy border between lambic and natural wine. A blend of 1-3 year aged barrels of our finest spontaneous ale (brewed according to lambic tradition) was racked onto the unpressed pomace of Cabernet Sauvignon grapes previously used to produce Physica wine. Perfectly balanced medium acidity, light funk, and dark fruit.
