The Open Work: Four Three Two One
a Blend of Four Year, Three Year, Two Year, and One Year Old Lambic-Style Barrels
We reserved our favorite barrels of lambic-inspired spontaneous ale for an Anniversary release as an unflavored gueuze. This is a blend of four exceptionally smooth and complex casks of spontaneous ale:
- -One oak barrel aged FOUR years
- -One oak barrel aged THREE years
- -One oak barrel aged TWO years
- -One oak barrel aged ONE year
This is a true passion project born of our love for lambic and gueuze. The Open Work is brewed with deference to traditional lambic process: after a turbid mash of 30% raw wheat and 70% pilsner malt, the wort is boiled four hours with aged hops and left to be inoculated spontaneously via ambient microbes riding on the nighttime air. No yeast is intentionally used; instead we rely solely upon our local microbiological terroir. The flavors found in this beer result equally from the providence of nature as from our careful years-long stewardship.
Four Three Two One has a tantalizing bouquet with notes including leather and pineapple. On the palate it shows perfectly balanced acidity resulting from a melange of acids unlocked by time. Fruity esters are prominent including plum, peach, and pear. This is some of our finest spontaneous ale.
