The Role

The Assistant Manager is a key partner to the General Manager in running Grimm Tavern day to day. You’ll run floor shifts as Manager on Duty, lead and develop the front-of-house team, and help uphold the service standards and culture the GM has set — while bringing your own eye for the details that make a shift run smoothly.

We’re looking for an Assistant Manager who draws satisfaction from making guests feel truly welcome; who wants to foster an atmosphere of casual warmth and elegance; who can uphold the dual goals of excellence and hospitality; and who wants to build community. 

This role reports to the General Manager and works closely with our executive chef, and the bar team. 

Responsibilities

  • Run the floor as Manager on Duty across lunch, dinner, and/or late-night shifts ensuring cleanliness, organization, and a consistently warm, gracious service experience.
  • Support the GM in ongoing training and development of servers, bartenders, hosts, and support staff.
  • Own shift-level cash controls: register closeouts, tip worksheet reconciliation, and safe/till accuracy at the end of each shift.
  • Support the GM on labor and beverage cost targets by managing scheduling to demand and monitoring shift-level performance.
  • Help train staff on Grimm beers, Physica wines, and the broader beverage list; maintain working knowledge of the food menu, ingredients, and allergens.
  • Oversee opening and closing checklists and support inventory counts and ordering for both FOH and BOH stock.
  • Be the face of hospitality on the floor: greet guests, anticipate needs, handle concerns gracefully, and step in to resolve issues before the GM needs to.
  • Support day-to-day operational systems — POS (Toast), reservations, third-party ordering platforms — and flag or resolve issues as they arise.
  • Complete incident and near-miss reporting promptly and accurately, and help maintain compliance with local, state, and federal regulations as well as Grimm’s house standards.
  • Step in for the GM in their absence, keeping ownership informed of anything that needs their attention.

Requirements

  • Minimum 2 years of FOH supervisory or shift-lead experience in a full-service restaurant or high-volume, craft-focused bar.
  • Comfortable running a shift independently as Manager on Duty, including guest service and staff coaching in the moment.
  • Strong knowledge of craft beer; working knowledge of natural wine.
  • Experience with Toast POS system
  • Comfortable with basic cash handling, register closeouts, and reporting.
  • Ability to continuously stand, walk up and down stairs, lift/move up to 160 lb. half bbl kegs, frequently bend and reach, and work in confined spaces and close quarters with others.
  • Must be comfortable in a fast-paced, variable-temperature environment.
  • Flexibility and ability to work days, nights, weekends, and holidays.

Schedule & Compensation

  • Salaried $60,000–$65,000/year, depending on experience
  • Grimm Tavern operates lunch, dinner, and late-night service six days a week; the schedule includes days, nights, weekends, and holidays as required.
