About Grimm

Grimm is a 100% family-owned brewery based in Brooklyn, New York. We’ve been named New York State Brewery of the Year by our state brewer’s association in 2021, 2022, 2024, 2025, and 2026. We got there by caring deeply about the details and holding ourselves to a higher standard of execution than the situation strictly requires. That philosophy runs through everything we do.

 

Under the Grimm umbrella, we also operate Physica Wines (low-intervention, whole cluster natural wines from North Fork grapes) and Lala’s Brooklyn Apizza (creative, New Haven-inspired, fermentation-driven sourdough pizza). Grimm Tavern is our newest venture: a full-service restaurant in Prospect Heights serving refined tavern food alongside our beers and wines. Next door, Grimm Goods is a small cafe offering coffee, prepared foods, breakfast sandwiches, biscuits, muffalettas, and canned beer to go.

The Role

We’re looking for a Pastry Chef to own our baking and pastry program — breads, baked custards, biscuits, and cookies — from recipe development through daily production. This is a hands-on role. You’ll be baking every day, building the recipes and production systems the program runs on, and holding the standard on everything that comes out of the oven.

 

We run a scratch kitchen with a serious focus on food safety, consistency, and craft. That means gram weights, written recipes, real cost discipline, and a station you’d be happy to have anyone walk past. If you want the freedom to shape a pastry program from the ground up and the discipline to make it repeatable, we want to hear from you.

 

Reports To: Kitchen management and ownership, and works closely with the Executive Chef.

Responsibilities: 

  • Develop, test, and refine recipes for breads, baked custards, biscuits, and cookies — in gram weights, documented so any baker can reproduce them.
  • Bake. Every day. Own daily and weekly production schedules so service is never short and waste stays low.
  • Cost out every pastry item (COG) and hit food cost targets in line with our kitchen standards.
  • Maintain HACCP-compliant food safety practices across all baking and custard production, including proper cooling, holding, and allergen documentation.

 

  • Source and manage pastry-specific ingredients and supplies — flours, dairy, chocolate — and own those vendor relationships.
  • Train and oversee pastry and bakery support staff as the program grows.
  • Collaborate with kitchen leadership on seasonal menu development and specials. Taste everything. Push for better.
  • Keep the pastry station clean, organized, and in full compliance with NYC Department of Health regulations at all times.

Qualities of a Pastry Chef

  • Proven experience as a pastry chef, baker, or in a similar role in a professional kitchen.
  • Strong technical skill across breads, custards, biscuits, and cookies specifically.
  • Comfortable working in gram weights and writing standardized recipe documentation.
  • Working knowledge of HACCP food safety principles, or the willingness to learn our system.
  • Basic understanding of food costing and COG targets.
  • Ability to work efficiently under pressure in a fast-paced service environment.
  • Strong communication and organizational skills.
  • NYC Food Protection Certificate (Food Handler’s License) required.
  • Experience with fermentation techniques is a real plus.
  • Experience developing recipes for cost-conscious, from-scratch kitchens is a plus.
  • Familiarity with allergen management and documentation is a plus.

Work Environment

This is a fast-paced kitchen in a new restaurant, and you’ll be helping build systems and culture from day one — both the challenge and the opportunity. The role requires the ability to stand and walk for extended periods, lift and move up to 50 lb., and work comfortably in a variable-temperature environment. Early morning starts are typical for bake production. We prioritize a fair scheduling system for weekends and holidays to share the load equitably across the kitchen team.
