ABOUT GRIMM

Grimm is a 100% family-owned brewery based in Brooklyn, New York. We’ve been named New York State Brewery of the Year by our state brewer’s association in 2021, 2022, 2024, 2025, and 2026. We got there by caring deeply about the details and holding ourselves to a higher standard of execution than the situation strictly requires. That philosophy runs through everything we do.

Under the Grimm umbrella, we also operate Physica Wines (low-intervention, whole cluster natural wines from North Fork grapes) and Lala’s Brooklyn Apizza (creative, New Haven-inspired, fermentation-driven sourdough pizza). Grimm Tavern is our newest venture: a full-service restaurant in Prospect Heights serving refined tavern food alongside our beers and wines. Next door, Grimm Goods is a small cafe offering coffee, prepared foods, breakfast sandwiches, biscuits, muffulettas, and canned beer to go.

THE ROLE

We’re looking for Line Cooks to join the team at Grimm Tavern. You’ll work a station on the line under the Executive Chef and Sous Chef, executing a menu of tavern classics done with care—dry aged burgers and steaks, house-made pickles, whole fish, seasonal sides—and helping out on the prepared foods program at Grimm Goods next door when needed.
This is a hands-on cooking job for someone who takes pride in the craft. We want cooks who show up sharp, work clean, and care about what leaves the pass. If you want to grow, there’s room to grow here. You’ll be cross-trained on every station—grill, sauté, pantry, garde manger—so you build a complete skill set and can move where the team needs you.

WHAT YOU’LL DO

  • Work your assigned station—grill, sauté, pantry, garde manger, or wherever the team needs you. Set up, execute service, break down, clean up.
  • Cook to spec, every plate, every shift. Plating, portioning, temperatures, timing—nail the details.
  • Prep with intention. Sharp knife work, clean cuts, accurate yields. No shortcuts on quality.
  • Keep your station spotless and organized. Mise en place is non-negotiable.
  • Communicate clearly on the line—call out tickets, answer back, work with your team to keep service moving.
  • Help on the prepared foods program at Grimm Goods next door when needed—sandwiches, biscuits, grab-and-go items, baked goods.
  • Follow recipes and standards as written. If you have an idea to make something better, bring it up—we want to hear it.
  • Maintain full compliance with NYC Department of Health regulations. Clean as you go.
  • Receive and break down deliveries. Rotate product. Label and date everything.
    Show up on time, in clean uniform, ready to work.

WHAT WE’RE LOOKING FOR

  • 1+ years of line cook experience in a quality-driven kitchen. More is great; the right attitude matters more.
  • Comfortable on at least one station and eager to learn the others. We’ll cross-train you.
  • Solid knife skills and a good understanding of the basics—stocks, sauces, proteins, vegetables.
  • You work clean. Your station tells us everything we need to know.
  • You can keep up. Fast-paced service doesn’t shake you.
  • You take feedback well and give it constructively. Ego stays out of the kitchen.
  • NYC Food Protection Certificate (Food Handler’s License) preferred—we’ll help you get it if you don’t have one.
  • Reliable, on time, and ready to put in real work.
  • Bonus points for experience with butchery, charcuterie, fermentation, or baking.
