ABOUT GRIMM
Grimm is a 100% family-owned brewery based in Brooklyn, New York. We’ve been named New York State Brewery of the Year by our state brewer’s association in 2021, 2022, 2024, 2025, and 2026. We got there by caring deeply about the details and holding ourselves to a higher standard of execution than the situation strictly requires. That philosophy runs through everything we do.
Under the Grimm umbrella, we also operate Physica Wines (low-intervention, whole cluster natural wines from North Fork grapes) and Lala’s Brooklyn Apizza (creative, New Haven-inspired, fermentation-driven sourdough pizza). Grimm Tavern is our newest venture: a full-service restaurant in Prospect Heights serving refined tavern food alongside our beers and wines. Next door, Grimm Goods is a small cafe offering coffee, prepared foods, breakfast sandwiches, biscuits, muffulettas, and canned beer to go.
THE ROLE
We’re looking for a Sous Chef to be the Executive Chef’s right hand across Grimm Tavern and Grimm Goods. This is a hands-on leadership position. You’ll be on the line and in the kitchen daily, cooking alongside your team while keeping the operation running smoothly. You’ll help shape a menu rooted in tavern classics executed with care—dry aged burgers and steaks, house-made pickles, whole fish, seasonal sides—and oversee the prepared foods program at Grimm Goods next door.
We’re not looking for someone who manages from a clipboard. We want a cook who leads, someone whose standards are visible in the food they put up every day. If you care about doing things right and want to help build something from the ground up, we want to hear from you.
WHAT YOU’LL DO
- Run the kitchen alongside the Executive Chef. When they’re not in the building, you’re in charge. Full stop.
- Cook. Every day. Lead by example on the line—grill, sauté, pantry, wherever you’re needed.
- Supervise and develop line cooks. Train, mentor, and schedule the team. We believe in cross-training to build a stronger kitchen and reduce daily stress on individuals.
- Help develop and refine menu items and daily specials. Taste everything. Push for better.
- Oversee the prepared foods program at Grimm Goods, including production schedules and quality standards for grab-and-go items, sandwiches, and baked goods.
- Manage inventory, ordering, and vendor relationships. Monitor food costs and minimize waste without cutting corners on quality.
- Maintain impeccable cleanliness and organization. Ensure full compliance with NYC Department of Health regulations at all times.
- Uphold plating standards, portion consistency, and the overall quality of every plate that leaves the kitchen.
WHAT WE’RE LOOKING FOR
- 3–5 years of experience as a Sous Chef or senior line cook in a quality-driven kitchen.
- Proficiency across all stations—grill, sauté, pantry, garde manger. You can work any position and teach others to do the same.
- Strong organizational skills. You keep prep lists tight, walk-ins clean, and service running on time.
- Leadership that’s earned, not assumed. You set the tone through your own work ethic and standards.
- NYC Food Protection Certificate (Food Handler’s License) required.
- Culinary degree or equivalent professional experience.
- Experience with charcuterie, butchery, or dry aging is a real plus given our menu.

SCHEDULE
Includes days, nights, weekends and holidays as needed to support business. We believe in a work and life balance and making schedule reflect this whenever possible. 40-45 hour work week.
