Lala’s Brooklyn Apizza is located on the upper level at Grimm Artisanal Ales in Williamsburg and is led by Chef Esther Stilwell. Opened in Summer 2023, the restaurant features our own eccentric take on the uniquely charred New Haven apizza style, with an ethereally thin crust made from our house-milled malted wheat, fermented with our own house sourdough culture, and baked in an Italian wood-fired oven. With a seasonally changing and locally sourced menu, Lala’s has been featured in publications like Eater, The New York Times, Time Out, and more. Our kitchen team is completely cross-trained and works collaboratively. We are passionate about food, experimentation, and the intersection between beer, fermentation, and food.

Qualifications: 

  • 4+ years of kitchen experience
  • Prior management or leadership experience
  • Ability to perform physical requirements of the role including standing/walking for entirety of shift, bending, pulling, pushing, using stairs, lifting and carrying up to 55 pounds
  • Ability to work a flexible schedule including days, nights, weekends, and holidays

In addition to all Pizza Cook responsibilities, Sous Chef responsibilities include:

  • Leading the kitchen team on the floor, before, during, and after service. This includes but is not limited to keeping staff on task, quality control, answering questions, problem solving and training. 
  • Work with Chef to manage inventory by doing cycle counts while assisting in kitchen area organization
  • Filling out post-service reports highlighting service, event details, inventory notes, general or staffing concerns. 
  • Participating in and/or co-leading staff, event, and general team meetings 
  • Prompt monitoring and communicating over internal communication channels with Chef, management team, and FOH team when necessary
  • Offering suggestions and creative ideas to continue improving kitchen efficiency
  • Maintaining calm and professional demeanor during high volume/stress moments. 
  • Assisting Chef in research, development, and execution of seasonal and special menus
  • Comply with and enforce sanitation regulations, safety standards, and SOPs.
  • Assist Chef and Facilities manager with facility maintenance and upkeep.
  • Enforces kitchen policies, standards, and quality
  • Ability to perform and fill in all kitchen stations as needed. 
  • Other roles and responsibilities when necessary
