Skopos | Pilsner | 5.3% | $17/4-pack

Skopos! The newest addition to our hoppy pilsner series, Skopos is abundantly hopped with the ever-classic Czech Saaz. Pilsner dominates the malt bill, but a small percentage of Vienna lends a gentle complexity and a touch of sweetness to the grist. The result is incredibly smooth–a slightly herbal punch up front that gracefully ebbs into a soft, crackery finish. As with all of our pilsners, we utilized a traditional rising-temperature step mash.

Gathering with Jester King II | Sour Ale with Merlot Grapes Aged in Oak | 6% | $15/500ml

The collaboration continues! Our friends at @jesterkingbrewery blended not one but two very different beers using our aged sour barrel stock. The first blend, released a few weeks ago as Gathering with Jester King, is bright and delicate, composed of relatively fresh barrels; the second blend places emphasis on older and more heavily oxidized barrel stock. For Gathering with Jester King II: Merlot, we began with a carbonic maceration of intact clusters of merlot grapes grown at Viviano Vineyards of Cutchogue, NY. The grapes spontaneously autofermented in their own juices before refermentation with Jester King’s exceptional blend of our own barrel aged sour ale. The result is a lush, magenta-hued beer that is bursting with big, juicy red fruit flavor and a soft tannic finish that we associate with Merlot wines. The abundant fruitiness  and complex acidity pairs beautifully with the super funky barrel stock that comprises a healthy portion of the blend. Limit 4pp.
